The Joy of Chex
New Twists on America's Favorite Party Mix
It wasn’t in the food section, but in the Media & Advertising section of NewYorkTimes.com that the article about Chex Mix appeared
 
“Chex®, Already a Ubiquitous Holiday Party Snack, Trots Out New Recipes” is a piece by Andrew Adam Newman published online on Dec. 9, 2009. It notes that “About half of the total yearly sales of Chex occur in the final three months of the year” -- during the holiday season. 
All because of Chex Party Mix, that miraculous holiday party staple. The demand is huge, as you might have noticed if you've tried recently to pick up your Chex. The store shelves in high season are often missing one of the holy trinity of cereals, either the Wheat, Corn or Rice Chex.  (Usually wheat, don’t ask me why.)
 
But that's not enough for Chex. Cereal just for breakfast is so last century.  To bump up the demand even more, Chex has now switched to microwavable party mix recipes, and held a contest for the best Chex Party Mix recipe. The $5,000 Grand Prize Winner — Monica Flatford of Knoxville, TN — who created a Buffalo Chex Mix, as in hot Buffalo Wings.
Which got us to thinking. We’re longtime, bigtime fans of Chex Mix. Why not add a little local flavor to our favorite snack? Below, find recipes for our own “Ches”-Mix, and “Ches-Mex”-Mix. “Ches” Mix – our local blend

Preptime: Depends. If you’re old school, bake your mixture in the oven
at 250º for about an hour, stirring every 15 minutes. New school: Nuke it. Follow the directions in one of the official Chex® recipes below to microwave.

Ingredients:
* 6 Tablespoons of butter
* 1 heaping tablespoon of Todd’s Crabby DIRT (This yummy herb blend can be found on the shelves at local supermarkets and gourmet shops. Mrs. Dash’s and Old Bay might work as well.)
* Dash of Worcestershire sauce

* Dash of garlic powder
* 9 cups of cereal, a mix of Corn, Rice and Wheat Chex

* 1 cup of Utz Pretzel Squares
* 1 cup of either Wye River Cheese Crabbers or White Cheddar Cheese Nips
crabbers400.jpg* 1 cup of mixed nuts (pecans, walnuts and peanuts are all local)
* 1 cup of sesame sticks
 
Melt butter and mix in next three ingredients. Taste. If you like things spicier, add more. Mix dry ingredients and pour this “sauce” over ingredients. I like to bake but microwaving is faster. Drain on paper towels.

“Ches-Mex” Mix

6 tablespoons butter
1/2 teaspoon cumin
1 teaspoon dried chipotle chili powder
Generous dash of garlic salt
A dash of Worchestershire sauce

9 cups of cereal, a mix of Corn, Rice and Wheat Chex
1 cup of Utz Pretzel Squares
1 cup of Pepper Jack Cheese Nips
1 cup of mixed nuts including pistachios
1 cup of nacho tortilla chips
1/4 cup of pepitas  (like a shelled pumpkin seed, available at better grocery stores)

Directions:

1. In large microwavable bowl, mix cereals, nuts, pretzels, cheese nips tortilla chips; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.

2.  Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

Oven Directions: Heat oven to 250°F. In large bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In ungreased large roasting pan, melt butter in oven. Stir in seasonings. Gradually stir in cereal mixture until evenly coated. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool, about 15 minutes. Store in airtight container.

Buffalo Chex® Mix – Recipe Winner

Prep Time: 15 Minutes
4 cups Rice Chex® cereal
4 cups Wheat Chex® cereal
2 cups Parmesan-flavored tiny fish-shaped crackers
2 cups pretzel twists
6 tablespoons butter
2-1/2 tablespoons hot sauce
1 packet ranch dressing mix
2 teaspoons celery seed

Directions
1. In large microwavable bowl, mix cereals, crackers and pretzels; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in hot sauce and seasonings. Pour over cereal mixture; stir until evenly coated.

2. Microwave uncovered on High 4 to 5 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

Original Chex Party Mix

Ingredients
3 cups Corn Chex® cereal
3 cups Rice Chex® cereal
3 cups Wheat Chex® cereal
1 cup mixed nuts
1 cup bite-size pretzels
1 cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces
6 tablespoons butter or margarine
2 tablespoons Worcestershire sauce
1-1/2 teaspoons seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder

Directions
1. In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.

2.  Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.
